Roasted Asparagus
1 bunch of Asparagus stems trimmed, rinsed and patted dry
2 tablespoons of Olive Oil
1 tablespoon of minced Garlic
Sun-Dried Tomatoes
Salt and Pepper
1 tablespoon of Lemon Juice
Preheat the oven to 400 degrees F.
In a large baking dish, toss the asparagus with olive oil, garlic and sun dried tomatoes. Season with salt and freshly ground black pepper.
Bake the asparagus until is lightly browned but still crisp- 10 to 15 minutes.
Transfer it on a serving platter and toss with the lemon juice.

We love asparagus around here too! This looks tasty.
Roasted asparagus is one of my favorites- as a snack or a side! I haven't tried it this way before, though!

Oh yum! I love roasted asparagus, but never thought of adding sun dried tomatoes!
