This easy Strawberry and Mango Salad is a colorful dish which is perfect for the summer and has a sweet tropical note to it.

My friend Wanda made me fall in love with salads. She is a talented writer and a very good cook . Ever since I tried her salads, I wanted to create different combinations like: spinach and blueberries or arugula, candied walnuts and apples.

I usually serve this salad with grilled salmon or shrimp. Please check the recipe below and let me know what easy and healthy dishes you plan to make this summer?

Strawberry and Mango Salad


1 head of butterhead salad

1 cup of strawberries

1 peeled and pitted mango

1/2 cup of button mushrooms

2 scallions


Vinaigrette

1/3 cup lemon juice

5 tablespoons olive oil

Salt and pepper


Dice the mango, strawberries, scallions, salad and mushrooms and combine them in a large serving bowl.

To make the citrus vinaigrette whisk the lemon juice, olive oil, salt and pepper in a small bowl.

When ready to serve, add the vinaigrette to the salad and mix well to combine.

Roasted Asparagus Easy Recipe

I am always looking for healthy and delicious dishes that are easy to make. Roasted Asparagus is a side dish very versatile which can be done in less than twenty minutes. For a light meal, serve it with grilled chicken or salmon.


Heatlth and Easy Recipe - Roasted Aparagus with Garlic and Dried Tomatoes

Roasted Asparagus





1 bunch of Asparagus stems trimmed, rinsed and patted dry

2 tablespoons of Olive Oil

1 tablespoon of minced Garlic

Sun-Dried Tomatoes

Salt and Pepper

1 tablespoon of Lemon Juice



Preheat the oven to 400 degrees F.

In a large baking dish, toss the asparagus with olive oil, garlic and sun dried tomatoes. Season with salt and freshly ground black pepper.

Bake the asparagus until is lightly browned but still crisp- 10 to 15 minutes.

Transfer it on a serving platter and toss with the lemon juice.
